The Olmecs were the first known civilisation in Mexico, dating all the way back to 2500 BCE. They were also the first to ferment, roast and grind cacao beans, and rightfully referred to their creation as ‘food of the gods’, literally. Cacao beans were also used as offerings to the gods.
